I started them last night

So I have been meaning to make the Sausage Lasagna Roll-ups for a little while now. I have had Italian Sausage links in my fridge since earlier in the week. I even pulled out some ground chicken for my batch. Of course the migraine headache struck and that knocked me down. Alas, last night I decided I was going to take it on in spite of the headache.

There I stood in the kitchen with two pans full of browned meat and sauce and I gave up. My head was still hurting and I was reading the directions and I decided there was no way I was going to get it done in a reasonable amount of time for dinner. It was too much work and too fiddly for my aching head. I still had to make the filling and boil the lasagna noodles. I still had a lot to do.

I stopped. I called it quits. I made grilled cheese sandwiches instead.

The sauce is ready to go in the fridge. The rest of the stuff should whip together fairly quickly. The construction of these things is another story. The directions look like a tedious and fussy process. I suppose I should not complain about this after willingly rolling burritos, taquitos, and enchiladas…
